From amongst the 50,000 casks maturing across our 16 warehouses, Billy hand-selected five Pedro Ximenez and Oloroso Sherry Puncheons for this bottling. With a very limited release of only 1,600 bottles available worldwide, The GlenAllachie 21 years old is offered at cask strength, natural colour and non-chill filtered, meaning this annual small batch release showcases GlenAllachie in its purest form.

Tasting Notes
Nose: Lashings of cocoa, heather honey and orange peel, with notes of cinnamon, mocha and fruit cake.
Palate: A fusion of fruit cake, treacle and heather honey, followed by layers of orange peel, stewed fruits and dark chocolate.
Finish: Ginger and orange zest on the finish.

Tasting Notes
Nose: Full of creamy caramel. Toasted oak with spices is evident and rich and just the faintest peat has muscled its way through.
Palate: The full rich flavours burst and fill the mouth with a creamy peat tang and a touch of vanilla's soft gentleness. If a touch of water is added, then the flavours increase with the addition of a sweet ripe fruit start followed by a tang of peat.
Finish: Full, succulent and quite long. More caramel and sugary barley notes and a lanolin smoothness and more tapering smoke.
