Tasting Notes
Nose: Robust aromas of warm, characteristically Bajan oak and sweet molasses open into a highly fragrant bouquet of dark, jammy hedgerow fruits like blackberries, plums, and stewed prunes, balanced beautifully by notes of vanilla cream, toasted coconut, and a touch of orange zest
Palate: A thick, oily mouthfeel initially coats the tongue with rich chocolate-covered cherries and sweet strawberry jam before shifting into a complex, drier profile dominated by baking spices, warming ginger, demerara sugar, and old leather
Finish: The finish transitions into a noticeably dry, slightly tannic experience where lingering oak and warming baking spices slowly fade alongside deeper, slightly bitter notes of dark cacao, raw walnuts, and breakfast tea.
